Barbecued Garlic Ribs

These toothsome ribs are great for a weeknight because they need marinate for only a short time. For a spicy version, add up to 1 tsp (5 mL) cayenne pepper to the marinade, or serve with your favourite hot sauce. Grilled vegetables on the side work well with the ribs.

Ingredients:

1/4 cup  (60 mL)  soy sauce

10 cloves garlic, minced

1 tbsp  (15 mL)  granulated sugar

1 tbsp  (15 mL)  sesame oil

2-1/2 lbs  (1.25 kg)  centre-cut pork side rib (three long strips)

4 green onions, minced

Preparation:

In large shallow dish, combine soy sauce, garlic, sugar and sesame oil; add ribs, turning to coat. Marinate at room temperature for at least 10 or up to 30 minutes. Reserving marinade, place ribs on greased grill over medium-high heat. Close lid and grill, basting with marinade for the first 20 minutes and turning once, until ribs are tender, about 30 minutes.

Sprinkle half of the onions over one side of ribs; turn and sprinkle with remaining onions. Close lid and grill, turning once, for 5 minutes. Transfer to cutting board; let stand for 5 minutes.
(Alternatively, arrange ribs on foil-lined baking sheet. Sprinkle with onions and pour reserved marinade over top; bake in 400F/200C oven until ribs are tender, 30 to 40 minutes.)
Cut into individual pieces.
Makes 6 servings.
