Rosemary-and-Black Pepper Lamb Chops

                          Makes 4  servings
Simple  season chops to get a hit  of  flavor  from a vibrant Mint Chimichurri sauce  Delicious  on  grilled meat , chimichurrie  is as popular in Argentina  as ketcup  is in America. My version includes  mint ... a classic flavor  pairing with lamb .

8................... (1-inch-thick) lamb rib chops (about 1 1/4 pounds)
1 ...................tablespoon extra-virgin olive oil
2 ...................tablespoons chopped fresh rosemary
1 ...................teaspoon ground coriander
1................... teaspoon kosher salt
3/4 ................teaspoon coarsely ground pepper
2 ...................garlic cloves, minced
  ** Mint Chimichurri (recipe  below )

1 .          Preheat  oven or  grill to medium high  (350* to 400*)
2.           Place lamb chops  in a large  bowl  and drizzle  with olive oil . Sprinkle  with rosemary   and next  4 ingredients   and toss to coat . Let stand  30 minutes  .
3 .          Place  chops  on a greased  grill rack  inside the stove . Cover and  bake   for  5 minutes on each side  for medium rare  (145*) ,  8 minutes  for medium (160*)  or  10 minutes  for well done (170) . Remove  from oven  ; let stand  5 minutes  . Serve with Mint Chimichurri .


Mint Chiminhurri  :
Prep time: 15 minutes
Yield: Makes about 2/3 of a cup.
 
2 ..........cloves garlic, chopped (about 2 teaspoons)
1 ..........cup fresh mint (spearmint) leaves, packed
1 ...........cup fresh Italian parsley leaves, packed
2 ............tablespoons  red wine vinegar
1/2 .........teaspoon Kosher salt
1/4..........teaspoon red pepper flakes
6 ............tablespoons  olive oil

1.              Place garlic in the bowl of a food processor and pulse several times until chopped. Add the mint and parsley leaves and pulse until finely chopped. (Alternatively chop everything finely by hand.) Remove to a medium bowl.
2.              Add the vinegar, salt, and red pepper flakes to the mint parsley mixture and stir until the salt has dissolved. Stir in the olive oil.
TIP :
Will keep for several days in the refrigerator.
