CHICKEN WITH WINE AND MUSHROOMS |

1 c. bread
crumbs, finely grated
4 whole chicken breasts or thighs, skinned and boned Salt and pepper to taste 7 tbsp. butter, divided 1/4 c. minced onions 1/2 c. chicken broth 1/2 c. white wine 1/2 lb. mushrooms, sliced (2 1/2 c.)
Sprinkle chicken with salt and
pepper. Coat chicken with bread crumbs. Brown in a large skillet over medium
heat in 4 tablespoons butter. Place chicken in a single layer in a baking dish.
Saute onions, in butter remaining in skillet until tender. Add broth and wine,
bring to boil. Pour around chicken and bake 40 minutes at 350 degrees. Saute
mushrooms with remaining butter. Add to chicken just before serving.
