Summertime Is Grilling Time ...Lets Get Started

Lime Chicken- Avocado Salad

                        Prep Time : 20 minutes.....Cook Time :16 minutes
1/2   cup freshly squeezed lime juice
1/4   cup olive oil
2       tbsp. honey
1/4   tsp. cayenne pepper
4       (4-oz) boneless, skinless chicken breasts
1       ripe avocado , pitted, peeled and sliced
1       cup grape tomatoes or quartered cherry tomatoes
1/2   cup peeled , seeded and chopped cucumber
1/4   cup chopped basil

1)     In small bowl . whisk together lime juice, olive oil , honey , salt to taste and cayenne pepper ; Pour half of mixture over chicken in resealable plastic bag , saving the remaining mixture for later use . Seal bag with chicken ; Place in refrigerator . 1 hour .
2)     Coat cold grill rack with nonstick cooking spray . Preheat groll to medium . Remove chicken from resealable bag , discarding marinade  and bag.Place chicken pirces on grll , cover with grill lid  and cook 8 to 10 minutes on each side  or until tender and no longer pink.(170*) . Chop into pieces.
3)     Combine chicken pieces , avocado , tomatoes , cucumber and basil in large salad bowl . Toss gently with reserved lime mixture and serve .

Grilled  Perch with Wasabi Aioli
                        Prep Time : 10 minutes.....Cook Time : 5 minutes
3          tbsp  Wasabi horseradish mayonnaise
2          tbsp  milk
3/4     tsp. peeled , grated  gingerroot
1/2      tsp. sesame oil
4          (4 oz) ocean perch fillets , thawed if frozen
1/2        tsp. garlic pepper

1)         Coat grill rack with nonstick cooking spray . Preheat grill to medium  direct heat  (300*f /149*C to 177*C) . Blend mayonnise , milk , ginger and oil in small bowl. Cover and refrigerate .
2)         Pat fish dry with paper towels . Coat fish evenly with non stick ooking spray and sprinkle with seasoning . place fish , seasoned side down , on grill rack or  on sheet of heavy duty foil on grill . Grill 4 to seven minutes or until fish flakes easily with a fol , carefully turning once . Top with a tablespoon of mayonnaise mixture and serve.
