Christmas Dinner or Buffet ... Part 1

Baked Ham With Peppery Bourbon-Brown Glaze
                        Prep time : 1 hour  ... Cooking time about 2 1/2 hours
8 1/2        pounds fully cooked , bone-in shank portion smoked ham
1/2          1/2 cup firmly packed light brown sugar
2             tablespoons bourbon or beef stock
1 1/4       teaspoons black pepper 

1)  Preheat oven to 325*F . Remove skin , if any from ham and trim fat  to thickeness of 1/4 inch .
2)  Place ham , cut side  down , on a rack in a shallow roasting pan. Insert a meat therometer in center of ham making sure it does not touch the bone  (or test later with an instant-read therometer)
3)   Bake ham uncovered , until therometer registers 130*F to 135*F --- about 2 to 2 1/2 hours . If ham browns too fast , cover loosely with foil . Meanwhile , combine sugar , bourbon , and pepper in a small bowl .
4)   Remove ham from the oven and increase oven temperature to 375*F . Using a sharp paring knife , score fat of ham in a diamond pattern . Brush sugar mixture over ham .
5)    Retun ham to oven  and bake uncov ered  until therometer registers 140*F --- 15 to 20 minutes . Let stand  at least 15 minutes before carving . Makes 16 serving .

           Shrimp & Crab With Cocktail Salsa 
      Chipotle Chilies Are the Key To This Sassy Cocktail Sauce
2      cups purchased medium salsa
2      cups bottle chili sauce
2      tablespoons prepared white horse radish
1      tablespoons (or more) chopped canned chipotle chilies
4      pounds cooked devined large shrimp
4      pounds snow crabs claws
        chopped fresh cilantro to taste (optional)
Mix first 3 ingredients in medium bowl . Mix in 1 tablespoon chilies , taste , adding more chilies if a spicier flavor is desided .(can be made 2 days ahead , cover , chill).
Fill large bowls with ice , arrange atop ice (to kep cold) . Sprinkle cilantro over sala . Serve shellfish with salsa.

          Green Bean Casserole
         Prep time : 10 minutes       Bake time : 30 minutes    
1      can (10 3/4 ounces)  Cambell Condensed  Cream of Mushroom Soup (regular , 98% Fat Free or Heart Healthy)
1/2    cup milk
1       teaspoon soy sauce
         dash  ground black pepper
4      cups cooked cut greens  beans ( optional .. canned green beans , drained)
1 1/3 cups French's French Fried onions
Stir the soup , milk , soy sauce , black pepper  and 2/3 cup onions in a 1 1/2 - quart casserole .
Bake at 350*F for 25 minutes or until the bean mixture is hot and bubbling .
Stir the bean mixture . Sprinkle with the remaining onions .
Bake for 5 minutes or until onions are golden brown.

  3. I will make the beans the day before and reheat them. I know it won't be as fresh or crisp but there are time constraints the day of the dinner. The casserole sounds really good so I don't want to leave it out.

  4. I am glad you like them ... they are easy and quick to make ... I will post some more for you to pick from .

    The casserole will be good , I try to use recipes I can make ahead or they are quick and easy ...yet still taste good .

    I also use the salsa dip for my vegetables .
    Your family will think you are a whiz and spent the day in the kitchen . This way they can serve themselves and you will have more time to entertain and visit them .
